Ingredients
1 Tbsp of butter
2 cups white, long-grain rice
⅓ cup diced jalapeños
⅓ cup diced green onions
1 clove garlic, crushed
1 tsp smoked paprika
½ tsp ground chipotle
1 tsp cumin
½ tsp salt
2¼ cups chicken stock
½ cup tomato sauce
Directions
In a sauce pan over medium-low heat, melt 1 tablespoon of butter. Add rice, jalapeños, green onions, and garlic. Stir thoroughly until rice is coated with melted butter. Add paprika, chipotle, cumin, and salt, then stir, allowing spices to blend and heat through. Add chicken stock and tomato sauce, stir until combined. Bring to a gentle simmer, cover, and lower heat to low. Simmer for 20 minutes.
Remove from heat but leave covered and allow to rest for 8 minutes. Remove lid and fluff rice with a fork. Serve.
