Snickerdoodles

Makes about 36

Ingredients

1 cup butter
1½ cups sugar
2 large eggs
2¾ cups flour
2 tsp cream of tartar
1 tsp baking soda
¼ tsp salt
3 Tbsp sugar
3 tsp cinnamon
1 tsp vanilla extract

Directions

In a large mixing bowl, cream together butter and sugar. Add vanilla and eggs; stir together until thoroughly combined.

Combine flour, cream of tartar, baking soda, and salt in a separate bowl.

Blend dry ingredients into butter mixture. Cover with plastic wrap, transfer to the refrigerator, and chill dough for at least 30 minutes. 

Mix 3 tablespoons sugar and 3 teaspoons cinnamon in a small bowl.

Scoop dough (1½ Tbsp at a time), form into a smooth ball, and coat by rolling in sugar mixture. Chill for at least 30 additional minutes.

Preheat oven to 350° and bake on an ungreased sheet pan for 13 minutes, 8 cookies per pan.

Remove from pan immediately and cool on a wire rack.
