Ingredients
1 can (14.75 oz) salmon
1 sleeve saltine crackers, finely crushed
½ medium onion, diced
1-2 eggs
½ tsp Old Bay seasoning
½ tsp tarragon
Directions
Drain salmon, remove any bones, then mix with crackers, onion, eggs, Old Bay, and tarragon until combined. Divide evenly and form into 6-8 patties.
Saute in a large pan over medium-high heat until golden brown on both sides, flipping once.
Patties can also be baked in a preheated 400° oven for 35-40 minutes or until golden brown, turning once during cooking.
