Ingredients
2 boneless, skinless chicken breasts
2 cups chicken stock (plain water works but stock will enhance the flavor)
Directions
Place chicken breasts in a medium saucepan and add chicken stock. Bring to a simmer over medium high heat then cover with a tight fitting lid, reduce heat to low, and simmer for 5 minutes. Turn chicken breasts over, cover, and simmer for another 5 minutes.
Turn the heat off and let rest, covered, for 15 minutes.
