Aunt Jeanine’s go-to dessert for family functions.
Ingredients
½ cup butter, softened
½ cup sugar
½ cup brown sugar
⅓ cup peanut butter
1 egg
½ tsp baking soda
¼ tsp table salt
½ tsp vanilla extract
1 cup flour
1 cup rolled oats
1 12-oz package semi-sweet chocolate chips
for the frosting
¾ cup powdered sugar
¼ cup peanut butter
5 Tbsp evaporated milk
Directions
Preheat oven to 350°. Grease a 9×13 cake pan and set aside.
In a small bowl, mix powdered sugar, peanut butter (¼ cup), and milk until smooth then set aside.
In a large bowl, cream the butter, sugar, brown sugar, peanut butter (⅓ cup), egg, baking soda, salt, and vanilla until mixed well. Add flour and oats, mix well. Press mixture into greased cake pan then transfer to a preheated oven and bake until light brown, about 20 minutes.
Remove from oven and even spread chocolate chips over the dish. Allow chips to melt then pour frosting over the top and spread evenly with a spatula. Allow to cool completely then serve.
