Pâte Brisée (pie dough)

Ingredients

1½ cups all-purpose flour
1½ tsp sugar
¼ tsp salt
10 Tbsp (1¼ sticks) cold unsalted butter; cut into ½-inch pieces
⅓ cup ice-cold water

Directions

Put the flour, salt, and butter in a food processor and pulse for about 5 seconds. Add the water and pulse for another 10 seconds, until the dough just begins to come together. 

Remove dough from the food processor and press it into a disk (there should still be visible pieces of butter). Wrap in plastic and refrigerate until chilled.

Note: This works well, not only with pies, but with any recipe calling for a crust, ie; chicken pot pie, dessert wraps, tarts, or galettes.
