Pan-Baked Pork Tenderloin

Ingredients

2-3 lb pork tenderloin
1 Tbsp oil
2 tsp Italian seasoning
1 tsp garlic powder
1 tsp cumin
1 tsp salt
1 tsp chili powder
½ tsp smoked paprika
¼ tsp black pepper

Directions

Pat pork tenderloins dry with paper towels and allow to come to room temperature. Place cold 12-inch stainless steel sauté pan in oven and preheat to 400°.

In a small bowl combine Italian seasoning, garlic powder, cumin, salt, chili powder, smoked paprika, and black pepper. Rub pork tenderloins with oil to coat then evenly cover with herb and spice mixture.

Remove hot pan from oven and place on the stove over medium heat. Pour 1 to 2 tablespoons oil into pan and sear the tenderloin until browned. Transfer the sauté pan to the oven and bake to an internal temperature of 165°, about 25 to 35 minutes.

Remove from oven, loosely cover with foil, and allow to rest for at least 15 minutes. Slice to desired thickness and poor pan juices over the meat or use to make a sauce.
