Magic Kingdom Cinnamon Rolls 

Based on the recipe from Disney’s Main Street Bakery

Ingredients

for the dough
2 packets of instant dry yeast
½ cup of water
2 Tbsp of sugar
2 cups of whole milk
1 package of instant vanilla pudding
2 cups of unsalted butter
2 eggs
1 tsp of salt
8 cups of flour
2 cups of brown sugar
2 Tbsp of ground cinnamon

for the cream cheese frosting
8 Tbsp unsalted butter
8 oz cream cheese
1 tsp of vanilla extract
3 cups of powdered sugar
3 Tbsp of milk

Directions

In a small bowl, combine water, yeast, and sugar. Stir until dissolved and set aside.

In a large bowl, mix pudding according to package instructions. Add ½ cup melted butter, egg, and salt. Mix well, then add yeast mixture and blend well. Gradually add flour and knead until smooth. Place in a large greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.

Punch down dough and let rise again a second time, about an hour.

Roll dough on a floured surface to about 34×21 inches. Brush 1 cup of melted butter over entire surface of the dough.

In small bowl, mix together brown sugar and cinnamon. Sprinkle over top of buttered dough. From the long end, roll dough tightly, jelly roll style. Measure every 2 inches and cut into rolls.

Gently pack each roll (this keeps it from coming apart during baking). Place each roll in a buttered baking pan and allow to rise in a warm place for about 20 minutes.

In mixing bowl, combine cream cheese, melted butter, vanilla, powdered sugar, and milk. Mix together until smooth.

Bake in a preheated 350° oven until golden brown, about 15-20 minutes.

Frost rolls while still warm then serve.
