Ingredients for 12 tartlets
1 sheet frozen puff pastry, partially thawed
1 beaten egg
⅓ cup lemon curd
12 fresh blackberries
powdered sugar, as needed
Directions
Preheat oven to 400°.
Partially thaw one sheet of puff pastry, unfold, and cut 12 rounds with a 2-inch cutter (avoid the seams). Transfer rounds to a Silpat-lined baking sheet. Using a 1-inch biscuit cutter, cut through the center of each pastry but leave dough in place. Lightly brush each pastry with eggwash.
Bake puff pastry in a preheated oven for 13-15 minutes then allow to cool completely.
With a sharp knife, cut around the 1 inch circle then press into the pastry; this will create a well for the lemon curd. Fill with lemon curd and top with a blackberry, raspberry, strawberry, blueberry, or other berry of your choice. Dust lightly with powdered sugar and serve.
