Helen Bridgman

This is a running joke in my family because nobody knows what the recipe was originally called. A lady named Helen Bridgman brought this dish to a gathering of some sort decades ago and we’ve referred to it ever since by her name.

Ingredients

1 head broccoli
1 head cauliflower
5 green onions
1 package frozen peas, thawed
1 can water chestnuts
1 can sliced mushrooms
1 cup cashews
1 cup miracle whip
3 Tbsp red wine vinegar
3 Tbsp sugar
salt & pepper to taste

Directions

Chop all ingredients except the cashews and mix together in a large bowl.  Whisk together miracle whip, red wine vinegar, sugar, salt, and pepper in a small bowl, taste for seasoning.  Pour sauce over the chopped vegetables and toss to combine, top with cashews.  Chill before serving.
