Ingredients
1½ lb Yukon gold potato, diced
1 onion, diced
1 carrot, diced
1 celery, diced
8 oz smoked ham, diced
3 garlic cloves, sliced
3 Tbsp butter
¼ cup flour
4 cups chicken broth, cold
2 cups water
½ cup cream
salt and pepper to taste

Directions
Over medium heat, melt butter and cook to a light golden brown then add vegetables, ham, and garlic. Cook until vegetables begin to soften, about five minutes.
Add flour, mix well, and cook at least three minutes. Slowly stir in cold chicken stock then add water. Raise heat to medium-high and bring to a simmer. Reduce heat to medium low and simmer for 15 minutes.
Taste for seasoning. Add diced potatoes. Cook for 15 minutes or until potatoes are tender.
Lightly mash with a potato masher 8-12 times to achieve desired consistency. Add cayenne pepper, black pepper, and cream. Ready to serve when cream is heated through.
