Ingredients
6 oz raisins, chopped
6 oz golden raisins, chopped
10fl oz strong hot Earl Grey tea
275g self-raising flour
225g light dark brown sugar
1 large egg, beaten

Directions
Add raisins and golden raisins to a bowl and pour in hot tea. Stir then cover and allow to soak overnight for the liquid to absorb.
When ready to bake, preheat the oven to 300°.
Butter a loaf pan then line with non-stick baking paper.
Add the flour, sugar and egg to the bowl of soaked fruit and mix thoroughly.
Spoon into the prepared loaf pan and level the top. Bake for 1¾ hours or until the cake is risen and just firm to the touch, but check for doneness after 1¼ hours.
Remove from oven and allow it to cool in the pan for about 10 minutes. Turn out the cake and remove the paper.
To serve, cut into thick slices and spread with butter.
