Ingredients
1 lb stew meat
1 lb beef, ground
1 onion, large, chopped
6 cloves garlic, minced
1 jalapeño, minced
1 green bell pepper, diced
¼ cup cilantro, chopped
15 oz tomato sauce
14.5 oz diced tomatoes
15 oz pinto beans
15 oz navy beans
1 Tbsp cumin
1 Tbsp chili powder
salt and pepper, to taste
12 fl oz beer, lager, or beef stock
Directions
Brown ground beef in a large dutch oven over medium-high heat. When browned, remove with a slotted spoon and set aside.
Brown stew meat in small batches. Remove when thoroughly browned, do not drain the fat.
Add onion, garlic, jalapeño, and bell pepper and cook on medium-high until tender.
Add meat and spices, then stir until well combined and cook until fragrant, about one minute. Add diced tomatoes, beans, and beer, lager, or stock and stir until well combined.
Cover with lid and simmer on low for one hour.
Taste for seasoning. Serve and top with shredded cheese, green onion, or sour cream if desired.
