Makes about 4 cups
Ingredients
1½ lb smoked ham, cut into cubes
¼ cup diced onion
¼ cup chopped celery, with some leaves included
½ cup shredded hot pepper cheddar, or other cheese (optional)
¼ cup Dijon mustard
4 tsp hot sauce (sriracha)
½ tsp cayenne
1 Tbsp Worcestershire sauce
⅔ cup mayonnaise, plus more if needed
salt to taste
chives and pickled red peppers to garnish, optional
Directions
Add ham, onions, and celery to a food processor. Pulse until very finely ground then transfer to a large mixing bow. Add cheese (optional), mustard, sriracha, cayenne, Worcestershire sauce, and mayonnaise, then mix well with a spatula.
Taste for seasoning and texture; it should be soft, moist, and spreadable. Cover with plastic and refrigerate for several hours before serving.
For a presentable spread, transfer to serving dish then line the edge of the dish with pickled red peppers and garnish with chives.
