Ingredients for 2 sandwiches
6 slices wheat bread, toasted
2½ Tbsp mayonnaise
1 Tbsp dijon-style mustard
4 lettuce leaves
4 slices colby-jack cheese or cheese of your choice
6 slices deli ham or roast beef, thinly sliced
6 slices deli turkey, thinly sliced
4 slices tomato
4 strips bacon
Directions
Preheat oven to 350°. Place bacon on the wire rack of a foil-lined sheet pan and transfer to the center of the oven. Bake for 25 minutes, remove from oven, turn bacon over, and transfer back to the oven. Continue baking for 20-30 minutes or until bacon is crispy. Blot with paper towel and set aside.
Toast each slice of bread. Add mayonnaise and mustard in a small bowl and stir until thoroughly combined. Spread 1 teaspoon of mayonnaise/mustard evenly over 1 side of each piece of toast.
Layer 1 slice of toast (mayonnaise-side up) with 1 lettuce leaf, 1 slice of cheese, 3 slices of thinly sliced ham or roast beef, 2 slices of tomato, and 1 slice of toast (mayonnaise-side down). Evenly spread 1 teaspoon of mayonnaise/mustard over toast, then top with 1 slice cheese, 3 slices of thinly sliced turkey, 2 strips of bacon, 1 lettuce leaf, and 1 slice of toast (mayonnaise-side down).
Cut in half diagonally from one corner to another and serve
