Ingredients
3 yellow-fleshed sweet potatoes
4 Tbsp butter
½ cup packed brown sugar
½ cup water
1 tsp salt
Directions
Preheat oven to 350°.
Wash, peel, and slice each potato in half then each half into lengthwise quarter slices. Add to pot of cold water and bring to a boil. Cook until just tender and drain.
Allow to cool to room temperature and cut each slice into ½-inch chunks. Place in 1½ quart casserole dish.
In a small saucepan over medium heat, melt butter, brown sugar, water and salt. When the sauce is bubbly and sugar is dissolved, pour over potatoes.
Bake covered for 30 minutes, occasionally basting the sweet potatoes with the brown sugar sauce.
