Ingredients
2-3 very ripe bananas, peeled
⅓ cup butter, melted
1 cup of sugar
1 egg, beaten
1 tsp vanilla extract
1 tsp baking soda
⅛ tsp salt
1½ cups all-purpose flour
Directions
Preheat oven to 350° and butter a 4×8-inch loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in melted butter to the mashed bananas.
Add baking soda and salt, stir to combine. Stir in the sugar, beaten egg, and vanilla extract. Then add the flour and stir until just combined. Pour batter into prepared loaf pan.
Transfer loaf pan to the center of a preheated oven and bake between 1 hour to 1 hour 10 minutes (check at 50 minutes) or until a toothpick inserted into the center comes out clean.
Remove from oven and cool completely on a wire rack.
Remove from the pan, cut into thick slices, and serve.
