Apple Butter

Makes about 4 cups

Ingredients

5 lb Granny Smith apples
1½ cups white sugar
½ cup brown sugar
¼ cup apple cider vinegar
1 tsp salt
2 tsp cinnamon
½ tsp allspice
⅛ tsp nutmeg
½ cup water

Directions

Wash, core, then quarter apples. Slice quarters in half lengthwise then cut into 1 inch dice. Transfer diced apples to a large slow cooker. Add white sugar, brown sugar, salt, cinnamon, allspice, freshly ground nutmeg, apple cider vinegar, and a splash of water then stir to combine. Cover and set on high.

When mixture comes up to temperature and begins to soften, stir and set slow cooker to low. Cook uncovered for several hours; mixture should be dark brown. Purée until smooth with an immersion blender or a stand blender. Continue cooking uncovered for several more hours, stirring occasionally; the apples should become a very dark, rich brown and reduce until thickened. Total cook time could be 10 hours or more.

When the desired thickness is achieved, pass through a fine mesh strainer. Transfer to an appropriate storage container or process in a water bath canner for 10 minutes.
