Ingredients for about 1½ cups
3 whole large eggs
¾ cup white sugar
⅔ cup freshly squeezed lemon juice
1½ Tbsp freshly grated lemon zest
5 Tbsp unsalted butter, room temp, cut in 3 or 4 pieces
Directions
Simmer 1 inch of water in a saucepan. In a mixing bowl, whisk together eggs, sugar, and lemon juice. Place mixing bowl over the simmering saucepan and whisk continuously until thickened, about 8 to 10 minutes.
Remove from heat then add lemon zest and butter. Whisk continuously until the butter is emulsified. Covered directly with plastic wrap and refrigerate until completely chilled.
Remove from refrigerator and stir well.
