Ingredients
1 can (15.5 oz) butter beans, drained
1 Tbsp Dijon mustard
2 Tbsp fresh lemon juice
3 Tbsp onions, chopped
2 Tbsp fresh parsley, chopped
1 tsp garlic, chopped
3 Tbsp extra-virgin olive oil
½ tsp each salt and freshly ground black pepper
Directions
In a bowl, lightly mix butter beans (do not mash), Dijon mustard, fresh lemon juice, chopped onion, chopped fresh parsley or chives, chopped garlic, extra-virgin olive oil, salt, and freshly ground black pepper.
Cut twelve ⅓-inch slices from a baguette. Mound the bean mixture on the bread slices. Serve.
