Paper Pork Shoulder

Ingredients

7 lb bone-in pork shoulder roast
2 Tbsp kosher salt
1 Tbsp freshly ground black pepper
1 Tbsp smoked paprika
2 tsp onion powder
1 tsp garlic powder
1 Tbsp brown sugar
1 tsp cayenne

Directions

Preheat oven to 225°.

Combine dry ingredients and evenly rub over pork shoulder. Tightly wrap in about 4 feet of parchment paper then turn 90° and wrap in another 4 feet of parchment paper. Tightly wrap in about 4 feet of heavy duty aluminum foil, turn 90° and wrap in another 4 feet of heavy duty aluminum foil, then turn 90° and wrap a third time in another 4 feet of heavy duty aluminum foil. Transfer to a preheated oven for 1.75 hours per pound. 

Remove from oven and let rest for at least one hour before unwrapping. 

Great when used to make pulled pork sandwiches combined with your favorite barbecue sauce.
